Moist Carrot Cake.

One of my favourite, favourite cakes of all time. I remember first eating this moist and crunchy goodness during one Hari Raya. The Mother made them, and I fell in love with the first bite. :3 The original recipe have
sultanas and currants in them, if you don't want it to be too sweet you can omit them. But don't omit the walnuts. Please. They're the star in this cake.

Moist Carrot Cake. 

175g grated carrot
50g sultanas
50g currants
100g chopped walnuts. if you can't get your hands on this, almonds or macadamia would be a nice substitute.Roast them for a while to get that nice crunch.

175g butter
175g castor sugar
3 eggs, grade A. If you're using grade C, add another.
essence of vanilla

200g plain flour, sifted
2 tsp baking powder
1/2 tsp mixed spices. Yeaaaah I don't like this. Optional.
1/4 tsp of salt

. cream the butter and sugar until light and fluffy. 
. add the eggs, one by one, mixing well each time
.  pour some vanilla essence in.
. fold in the C ingredients
. mix in the A ingredients.
. grease and dust some flour onto your baking dish, and bake for 40 minutes,170'c, then turn the heat down to 150'c and bake for another 10 minutes.
